Broccoli Salad
If you’re looking for a healthy dinner recipe, you’ve just found it! I switched up a few things in this traditional salad recipe to make it my own, and it turned out f-a-b-u-l-o-u-s!
This salad is keto friendly and can be made however you like!
We added more chicken to it to make it a complete meal
Recipe: Dressing
1 cup avocado mayo (I like to use 1/2 cup avocado mayo and 1/2 cup plain coconut yogurt)
2 tbsp raw apple cider vinegar
3 tbsp raw unpasteurized honey
2 tbsp hemp hearts
1 tsp each himalayan salt and black pepper
Combine above ingredients together and whisk until blended
Salad:
1 broccoli head, chopped into bitesized pieces
1/4 cup sesame or pumpkin seeds
1/2 cup grapes, strawberries, cranberries or raisins
3/4 cup shredded cheese of choice
1/2 package of bacon, cooked and chopped
Combine all of the above ingredients and drizzle the dressing overtop and mix until combined. Enjoy!
